Healthful Chocolate Cherry Granola Bars

These granola bars are a delicious pick-me-up! They are full of dietary fiber, omega 3 oils, magnesium and B vitamins. The nuts, dark chocolate, olive oil, hemp seed hearts and oats are packed with monounsaturated fatty acids, which help boost your energy and help your body burn excess fat. Their sweet, tantalizing taste is just the cherry on top!

This recipe makes 20 servings. They are 410 calories each.

Let’s begin! You’ll need:

  • 1 1/2 cup almonds, pulsed into chunks
  • 1/2 cup macadamia nuts, pulsed into chunks
  • 3 cups steel cut oatmeal or rolled oats
  • 2 T all-purpose flour
  • 1 1/3 cup dried, unsweetened cherries, chopped
  • 4 oz 95% dark chocolate, pulsed into chunks
  • 1 1/2 T hemp seed hearts
  • 2 cups packed brown sugar
  • 4 eggs
  • 2 T extra virgin olive oil
  • 2 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 2 tsp vanilla extract

Preheat your oven to 325 degrees. Move your oven rack to the top 1/3 of your oven.

Line a 9×13 baking pan with foil, leaving an extra inch of foil hanging over the edge of the pan. Coat with a tablespoon of olive oil.

Take out a separate baking pan with sides. Cover the bottom with a silicone baking mat or parchment paper. Combine the almonds and macadamia nuts in a bowl.

Pour 2/3 cup of the nut mixture and 1 cup of the steel cut oatmeal in the baking pan. Bake for 17 minutes, stirring halfway through. Let cool slightly.

Move your oven rack to the middle of your oven.

Place the flour and the remaining oatmeal in your food processor and blend until smooth. Transfer this flour mixture to a medium bowl. Add the cherries, chocolate, hemp seed hearts, untoasted nuts, and the toasted nut/oats to the flour mixture. Stir to combine.

Whisk the eggs in a large bowl until they are a creamy, light yellow. Add your brown sugar, olive oil, cinnamon, sea salt and vanilla extract to the eggs. Whisk well to combine.

Stir in the oat mixture into the egg mixture with a spoon until just combined. Spread into your oiled, foiled 9×13 pan.

Bake for 30 minutes, or until they are golden brown.

Let the entire pan cool for 10 minutes, then remove the foil from the pan to a cooling tray. Allow the bars to cool completely to room temperature.

Slice them gently into 20 servings with a warm knife, wiping the knife between each cut to keep them from falling apart.

Store in an airtight container in a cool, dry place for up to 2 weeks.
